Which cakes are made in-house at New Level Coffee & Bakery?
There are seven, all baked in-house daily and sold by the slice: Pistachio & Raspberry, Strawberry, Chocolate & Blueberry, Snickers, Honey & Raspberry, Honey Cake (medovik) and Napoleon.
They sort themselves into three groups, which makes choosing easier when you are standing there deciding. Two are layered Eastern European classics built on patience rather than decoration. Three lean on fruit, with tartness doing the work that sweetness usually does. Two are for the chocolate end of the table. Whichever way your taste runs, there is a slice here for it, and you can eat it in or take it with you.
What are Honey Cake and Napoleon?
They are the two Eastern European classics on the list, and both are made of many thin layers.
Honey Cake, known as medovik, is built from thin honey layers with a soft cream filling — traditionally a sour-cream based one. The honey is what you notice first, then the way the layers soften into something almost creamy. It suits anyone who finds most cakes too sweet.
Napoleon is the Eastern European mille-feuille: many thin puff-pastry layers with custard cream between them. It is lighter on the tongue than it looks, and it is the one to order if you like contrast — crisp pastry, cool custard.

Which cakes are the fruit-forward ones?
Three of the seven put fruit at the center: Pistachio & Raspberry, Strawberry, and Honey & Raspberry.
- Pistachio & Raspberry — nutty and green against sharp raspberry. The most grown-up slice on the list, and a good pick if you usually skip dessert.
- Strawberry — the straightforward one, and the easiest to hand to a child or to someone who wants a familiar flavor rather than a project.

Two cakes cover that: Chocolate & Blueberry and Snickers.
Chocolate & Blueberry pairs deep chocolate with blueberry, so the fruit keeps the chocolate from sitting too heavily. It is the slice for someone who wants chocolate but not a chocolate coma afterward.
Snickers is named for the candy bar and tastes like it was meant to — the richest thing in the case. Order it when you want dessert to feel like dessert, and consider sharing it if you have already had lunch.
Both work well as a mid-afternoon stop rather than a finish to a big meal.

Which coffee goes with which cake?
The short answer: the sweeter the slice, the plainer the coffee should be.
- Napoleon or Honey Cake — an Espresso or an Americano. Both cakes are gentle, and a clean black coffee gives them something to push against.
- Pistachio & Raspberry, Strawberry, Honey & Raspberry — a Cappuccino or a Latte. Milk rounds off the tartness without burying it.
